Beef fillets in olives sauce


Olives, olive oil, olives,  olive oil …! What better than this recipe!

I had heard of this recipe but I had not ever cooked it, so it was necessary to get help from Lala Llarena.

– 4 fillets of beef or Iberico pork
– 1 onion
– 1 clove of garlic
– ½ cup of red wine
– Pitted black olives
– Flour
– Salt
– White pepper
– Parsley
– Olive oil organic extra virgin BAETURIA.

Salt the fillets and pass them in flour, shaking well, do not go too far with flour, it is not necessary.Fry them in a skillet with hot olive oil, then reserve them beside.

For the sauce, use the same olive oil,but  at  lower temperatuure.  Put the onion and minced parsley, when we see the onion starts to get tender, add the garlic and half  of the chopped olives, and fry all lightly.

In a saucepan or a pressure cooker, I recommend the latter because the cooking time drops significantly, while in a pan we will be very attentive to add water until we notice that the meat is tender,  put the steaks with the sauce, the half glass of wine and add water to cover all. Add the pepper, the remaining ​olives  and salt.

Cooking time in a pressure cooker will be 10 to 15 minutes (since it boils), and with a saucepan it will be about an hour.

Note: If you like thicker sauce, you can add a teaspoon of flour, a couple of minutes before to get it ready.
